
The Scarlet Pimpernel Merlot/Malbec
Dark youthful purple colour. Lashings of crushed black berries and fleshy plum aromas with a supple, succulent, earthy richness backed by some cherry flavors. The palate entry is soft but a good tannin structure balance the wine.
Technical Notes
Grapes were hand-harvested for greater quality control and upon arrival at the cellar the bunches were sorted before de-stemmed. The whole berries were transferred into stainless steel tanks for fermentation. Each cultivar was fermented separately. The fermentation was started with a yeast and the fermentation takes about 14 days at 23 to 28°C. Regular pump overs were done on the tanks to ensure good extraction of flavors and tannins. Tanks are pressed after fermentation and the free run wine are racked into stainless steel tanks to undergo malolactic fermentation. After 6 months the 4 varieties are blended and prepared for bottling.
