Lots The wine has a deep purple colour with flashes of scarlet. Enticing blackcurrant pastilles and mulberry aromas are uplifted with subtle cinnamon and aromatic white pepper. The palate is gentle and the tannins fresh but rounded. The aromatics continue into the palate with added blueberry, red cherry, plums, a hint of roasted black olives and soft-spoken sweet spice. A versatile, vibrant medium-bodied wine, with a lengthy and elegant finish. spicy notes, including hints of nutmeg with bright red cherry and plum fruit. Finally the rich fullness and lengthy complexity from the ensures an excellent finish that makes this a delicious wine!
Technical Notes
Our Shiraz is produced from vines averaging just over 30 years old planted on predominantly Shale and Quartz soils. The vineyards are planted on south and south east facing slopes. Sustainably farmed in what has traditionally been a harsh and arid climate, these sites and clones promote greater aromatics and a more accessible palate. All grapes are hand selected and chilled overnight before being partially destemmed and placed as whole berries in open-top fermenters. The berry mash is cold soaked for 48hrs, before fermenting spontaneously. Fermentation takes place at a cool 22°C. During fermentation, the wine is mixed by punch downs. This method facilitates greater control and expression of the wine. Once fermentation is complete the skins are pressed in a traditional basket press and only 50 % of this wine was transferred to 500 L third fill French oak barrels for 6 months. Just before bottling the unwooded and lightly wooded components were blended before bottling.
