Chenin Blanc

Pale straw, clear and bright. The wine shows up front ripe pear, stone fruits and some yellow apple like characters. You also get hints of dried apricot fruit role that hides in the background. The palette entry is smooth with yellow apple notes and finish with freshening acidity. Made for summer enjoyment and casual entertaining.

Technical Notes

100% Chenin Blanc from vines averaging 10 years that are planted on limestone and alluvial soils at altitude150m, in Robertson. The grapes were handpicked early morning at 22-24 balling and come from 3 separate sites. After the grapes were destemmed, they were only lightly pressed to ensure good quality juice for fermentation. The juice settled for 48hours with a settling enzyme before it was racked, with different yeasts used to enhance the flavour profile of the wine. Fermentation took about 18 days at 15–22 C̊ in stainless steel tanks. After fermentation, the wine was left on the lees for 6months and stirred regularly for good mouth feel. After 6 months of lees contact the final blend was fined with bentonite and cold stabilized before bottling.
